Juice bars abound.
So what's different about a smoothie?
Nothing wrong with juicing, really. Well, actually there is—stuff missing—and I'll explain. But who'd want to rain on the parade of someone who at least cares enough about their body to give it juice? Not me.
Still, in the overall scheme of things, green smoothies are beyond juicing.
Here's why: fiber. We need it, and we don't get nearly enough.
A good blender can transform all that cellulose in your greens into ready-to-digest fiber, meanwhile liberating all the good stuff.
When I was heavily into juicing, it bothered me a lot to have all that bulk to clean out of my pricey juicer and get rid of. I solved that problem by getting a worm composter and feeding it all to my little wiggly wigglers… but looking back it does seem ridiculous.
Ditto for the greens you've bought and then not used. Carrot tops, radish tops, beet tops. It's very trendy to ship the entire plant. Looks great in the produce department. And if you're only consuming the carrots, radishes or beets and discarding their leafy tops, you're missing the boat.
This morning's smoothie was strawberries, blueberries, bananas and beet tops! Of course, the red and the blue were to enhance the coloration brought to the party by those red stemmed beet leaves.
'Berry Beet-y' I christened it. Such a relief to be valuing the whole beet plant!
